Remove Ed from maintainer list

It has been some time since I had any input on bej encoding for Redfish
devices. Nothing in my current work stream uses it as a feature.
Brandon and Willy are more than capable of maintaining this repo without
me, so I feel good leaving it in their hands.  I don't need to be listed
here anymore.

As always, if you need my help, I'm available.
